The availability of meat grinders can help to provide a kebab maker with a key ingredient—fresh ground meat. If someone buys ground meat at the store and then keeps it refrigerated for a few hours before using it, then it is sure to form some juices. Such juices would later contribute to the amount of water in any meaty mixture.
